Instructions

1. Prepare the Dough:

  • Add the egg, fresh lemon juice, lemon zest, and vanilla extract. Mix until fully incorporated.
  • In a separate bowl, whisk together the flour, baking powder, and salt.
  • Gradually add the dry ingredients to the wet ingredients, mixing until a soft dough forms. Be careful not to overmix.

2. Chill the Dough:

  • Cover the bowl with plastic wrap and refrigerate the dough for at least 1 hour (or up to overnight). This helps the cookies hold their shape while baking.

3. Bake the Cookies:

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
