Ingredients

Creamy Layer:
- 8 oz (225g) mascarpone cheese, softened
- 1 cup (240ml) heavy cream, chilled
- ¼ cup (30g) powdered sugar
- 1 tsp vanilla extract
Assembly:
- 1½ cups mixed fresh berries (raspberries, blueberries, strawberries)
- ¾ cup crushed shortbread cookies or meringues
- Mint leaves (for garnish)
Quick Lemon Curd (if homemade):
- 3 egg yolks, ½ cup sugar, ⅓ cup lemon juice, ¼ cup butter. Whisk over double boiler until thickened (~10 mins). Cool.
Instructions
