Ingredients

- 10 tbsp (140g) unsalted butter, softened
- Zest of 2 lemons

- ½ cup (115g) unsalted butter, browned
- ⅓ cup (70g) brown sugar
- Zest of 1 lemon
- 2 tbsp poppy seeds
- 1 tbsp lemon juice
For the Glaze:
- 1 cup powdered sugar
- 2–3 tbsp lemon juice
- Optional: pinch of salt or lemon zest for extra zing
Instructions
- Make the Dough In a stand mixer, combine flour, sugar, poppy seeds, yeast, and salt. Add eggs, milk, and lemon zest. Mix until combined. Gradually add butter, one tablespoon at a time, kneading until dough is smooth and elastic (about 10 minutes). Cover and let rise until doubled (1–2 hours).
- Prepare Filling Brown the butter in a saucepan until golden and nutty. Let cool slightly, then mix with brown sugar, lemon zest, lemon juice, and poppy seeds.
- Shape Rolls Roll out dough into a rectangle (about 12×16 inches). Spread filling evenly. Roll up tightly from the long side and slice into 12 rolls.
- Second Rise Place rolls in a greased baking dish. Cover and let rise for 45–60 minutes until puffy.
- Bake Preheat oven to 350°F (175°C). Bake rolls for 25–30 minutes until golden and cooked through.
- Glaze Whisk powdered sugar and lemon juice until smooth. Drizzle over warm rolls.
