This dessert replaces the traditional sherry-soaked sponge and custard with a vibrant and effervescent twist. The foundation of this amazing dessert is a prosecco jelly. Yes, you read that right – a light, sparkling jelly made from prosecco that provides a subtle, bubbly base. Layered on top of this is a zesty lemon drizzle cake, which adds a wonderful citrusy punch and a delightful texture. The cake absorbs some of the limoncello, making it incredibly moist and flavorful.

 


Ingredients

  • 3 sheets leaf gelatine
  • 3 tbsp caster sugar, divided
  • 250ml prosecco, room temperature
  • 4 tsp sherbet (from a 23g Barratt Dip Dab pack)
  • 3 tbsp limoncello
  • 25g shelled pistachios, finely chopped
  • 1 lemon, zested
  • 200g lemon drizzle cake, cut into small chunks
  • 150ml whipping cream
  • 150ml Greek yogurt
  • 4 tsp lemon curd

Instructions

  1. Make the Prosecco Jelly
    • Soak gelatine sheets in cold water for 5 mins.
    • In a pan, dissolve 1 tbsp sugar in 2 tbsp water over low heat.
    • Squeeze out gelatine and stir into the warm sugar solution until fully dissolved.
    • Slowly pour prosecco into the pan and stir gently.
    • Divide mixture among 4 glasses (about 250ml each).
    • Stir 1 tsp sherbet into each glass. Chill for 3–4 hours until set.
  2. Prepare the Rim Garnish
    • Mix pistachios, zest of ½ lemon, and 1 tbsp sugar on a plate.
    • Pour limoncello onto a separate plate.
    • Once jelly is set, dip each glass rim into limoncello, then into the pistachio mix.
  3. Layer the Trifle
    • Add a layer of lemon drizzle cake over the jelly.
    • Drizzle remaining limoncello from the plate over the cake.
  4. Make the Cream Layer
    • Whip cream with 1 tbsp sugar until medium peaks form.
    • Fold in Greek yogurt.
    • Spoon over the cake layer and swirl in 1 tsp lemon curd per glass.
  5. Finish and Serve
    • Sprinkle with remaining pistachio-lemon sugar and extra lemon zest.
    • Serve immediately or chill for up to 2 days.
