Ingredients
Mascarpone Filling:
- 2 cups mascarpone cheese

- ¼ cup Limoncello

Whipped Cream:
- 2 cups heavy whipping cream

Limoncello Soak:
- ¾ cup sugar
- Juice and zest of 4 lemons
- ½ cup Limoncello
Assembly:
- 2 packages ladyfinger cookies (Savoiardi style)
- ¼ cup lemon curd (for drizzle)
- 1 tbsp Limoncello or leftover soak
- Lemon zest and fresh mint (optional garnish)
Instructions
- Make mascarpone filling: Beat mascarpone, lemon curd, Limoncello, lemon juice, and zest until smooth.
- Whip cream: In a separate bowl, beat heavy cream and powdered sugar until stiff peaks form. Gently fold into mascarpone mixture.
- Prepare soak: Boil sugar with lemon juice and zest. Simmer 2 minutes, then stir in Limoncello. Cool slightly.
- Assemble layers: Quickly dip ladyfingers in soak (don’t oversaturate). Layer half in a 9×13 pan. Spread half the mascarpone mixture over. Repeat with remaining ladyfingers and filling.
- Drizzle topping: Thin lemon curd with Limoncello or soak. Drizzle over top.
- Chill: Cover and refrigerate at least 4 hours or overnight.
- Serve: Garnish with lemon zest, mint, or candied lemon peel.
