  • Juice and zest of 4 lemons
  • ½ cup Limoncello

Assembly:

  • 2 packages ladyfinger cookies (Savoiardi style)
  • ¼ cup lemon curd (for drizzle)
  • 1 tbsp Limoncello or leftover soak
  • Lemon zest and fresh mint (optional garnish)

Instructions

  • Make mascarpone filling: Beat mascarpone, lemon curd, Limoncello, lemon juice, and zest until smooth.
  • Whip cream: In a separate bowl, beat heavy cream and powdered sugar until stiff peaks form. Gently fold into mascarpone mixture.
  • Prepare soak: Boil sugar with lemon juice and zest. Simmer 2 minutes, then stir in Limoncello. Cool slightly.
  • Assemble layers: Quickly dip ladyfingers in soak (don’t oversaturate). Layer half in a 9×13 pan. Spread half the mascarpone mixture over. Repeat with remaining ladyfingers and filling.
  • Drizzle topping: Thin lemon curd with Limoncello or soak. Drizzle over top.
  • Chill: Cover and refrigerate at least 4 hours or overnight.
  • Serve: Garnish with lemon zest, mint, or candied lemon peel.
