  • 5 tbsp tahini

  • 2 tbsp lemon juice
  • 2 tsp Dijon mustard
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 24 tbsp water (adjust for consistency)

Instructions

  • Preheat oven to 400°F (200°C). Line a baking pan with parchment paper or foil and drizzle 1 tbsp olive oil on the bottom.
  • Prepare sweet potatoes: Scrub them clean, remove any bad spots, and place them on the baking pan. Bake for about 50 minutes until tender.
  • Cook chickpeas: Heat 1 tbsp olive oil in a pan over medium heat. Add diced onion and garlic, sautéing until fragrant.
  • Add spices: Stir in chickpeas, harissa paste, cumin, and salt. Cook for 5-7 minutes, allowing flavors to meld.
  • Make tahini sauce: In a bowl, whisk together tahini, maple syrup, lemon juice, Dijon mustard, salt, and black pepper. Gradually add water until smooth.
  • Assemble: Slice open baked sweet potatoes, mash the insides slightly, and top with the chickpea mixture.
  • Drizzle with tahini sauce and garnish with chopped cilantro.
