Ingredients
For the Sticky Rice
- 1 cup glutinous (sticky) rice
- 1 cup coconut milk
- ¼ cup granulated sugar
- ¼ tsp salt
For the Coconut Sauce
- ½ cup coconut milk
- 2 tbsp sugar
- 1 tsp cornstarch + 1 tbsp water (optional, for thickening)
For the Parfait Layers
- 2 ripe mangoes, peeled and diced
- ¼ cup toasted coconut flakes (optional)
- Mint leaves (for garnish, optional)
Instructions
- Cook the Sticky Rice
- Rinse rice until water runs clear.
- Soak for at least 4 hours or overnight.
- Steam in a cheesecloth-lined steamer for 20–25 minutes until tender.
- Flavor the Rice
- Heat coconut milk, sugar, and salt until sugar dissolves (don’t boil).
- Pour over warm sticky rice, stir, and let sit for 10–15 minutes to absorb.
- Make the Coconut Sauce
- Heat coconut milk and sugar until dissolved.
- For a thicker sauce, stir in cornstarch slurry and cook for 1–2 minutes.
- Let cool slightly.
- Assemble the Parfaits
- In clear glasses, layer sticky rice, mango, and coconut sauce.
- Repeat layers and top with toasted coconut and mint.
- Serve
- Chill briefly or serve immediately for best texture and flavor.
