Ingredients
For the Biscuits:
2 cups all-purpose flour
1 tbsp baking powder
½ tsp baking soda
¾ tsp salt
½ tsp black pepper
6 tbsp cold unsalted butter, cut into cubes
1 cup sharp cheddar cheese, shredded
½ cup cooked bacon, chopped (about 5–6 slices)
¾ cup cold buttermilk
2 tbsp pure maple syrup
For Topping (optional but delicious):
1 tbsp melted butter
1 tbsp pure maple syrup
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Cook bacon until crisp, then drain and chop into small pieces. Set aside to cool.
Mix dry ingredients.
In a large bowl, whisk together flour, baking powder, baking soda, salt, and black pepper.Cut in butter.
Using a pastry cutter or your fingers, cut cold butter into the flour mixture until it resembles coarse crumbs (pea-sized pieces of butter are perfect).Add cheese and bacon.
Stir in shredded cheddar and chopped bacon.Mix wet ingredients.
In a small bowl, whisk together buttermilk and maple syrup.Combine and form dough.
Pour the wet mixture into the dry ingredients. Gently stir until just combined — do not overmix. The dough should be slightly shaggy.Shape biscuits.
Turn the dough out onto a lightly floured surface. Gently pat or roll to about ¾-inch thickness.
Cut with a 2½-inch biscuit cutter (or a glass). Re-roll scraps once if needed.Bake.
Place biscuits on the prepared baking sheet, about 1 inch apart.
Bake for 13–15 minutes, until golden brown on top.Glaze (optional).
Mix melted butter and maple syrup, and brush over warm biscuits right out of the oven.
