  • Salt & black pepper, to taste

Instructions

1. Make the Spinach Risotto

  1. Heat olive oil and butter in a saucepan over medium heat.
  2. Add onion and garlic, sauté until translucent.
  3. Stir in Arborio rice and toast for 1–2 minutes.
  4. Deglaze with white wine (if using).
  5. Gradually add warm broth, one ladle at a time, stirring constantly until absorbed before adding more.
