Description

Dry Ingredients:

  • 1½ cups all-purpose flour
  • 3 tbsp cornstarch (for tenderness)
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tbsp matcha powder

Wet Ingredients:

  • 1 cup plain yogurt
  • ¾ cup granulated sugar
  • ½ cup vegetable oil
  • 3 large eggs
  • 2 tsp vanilla extract

  • ¾ cup white chocolate chips or chunks

Instructions

  • Prep the Oven & Pan: Preheat oven to 350°F (175°C). Grease and line a loaf pan with parchment.
  • Mix Dry Ingredients: In a bowl, whisk together flour, cornstarch, baking powder, salt, and matcha.
  • Mix Wet Ingredients: In another bowl, whisk yogurt, sugar, oil, eggs, and vanilla until smooth.
  • Combine & Divide: Stir wet into dry until just combined. Fold in white chocolate. Divide batter into two portions—leave one plain, mix matcha into the other.
  • Layer & Swirl: Alternate spoonfuls of matcha and plain batter into the pan. Use a butter knife to gently swirl for a marbled effect.
  • Bake: Bake for 50–55 minutes, or until a toothpick comes out clean. Cool in pan for 20 minutes, then transfer to a wire rack.
