Matcha White Chocolate Truffles are an elegant dessert that combines the rich, sweet flavor of white chocolate with the earthy, slightly bitter notes of matcha powder. The smooth ganache is made by melting together high-quality white chocolate, heavy cream, and butter, with matcha powder whisked in to infuse a vibrant green color and distinct flavor. Once chilled and set, the mixture is rolled into bite-sized balls and can be coated in various toppings, such as matcha powder, crushed pistachios, or freeze-dried raspberries, to add texture and flavor.
Ingredients
- White chocolate (good quality) – 10 oz (about 285g), finely chopped
- Heavy cream – ⅓ cup
- Unsalted butter – 2 tbsp
- Matcha powder – 1 tsp (sifted for smoothness)
- Pinch of sea salt
- Optional coating: extra matcha powder, crushed pistachios, or freeze-dried raspberries
Instructions
- Warm the base In a small saucepan, gently heat the cream and butter until just melted. Add salt and whisk in sifted matcha powder until smooth.
- Melt the chocolate Place chopped white chocolate in a heatproof bowl. Pour the warm matcha cream over it. Let sit for 2–3 minutes, then stir until fully melted and glossy. Tip: If the mixture separates, add 1 tsp hot water and stir gently.
- Chill the ganache Cover the bowl and refrigerate for 2–3 hours until firm enough to scoop.
- Form the truffles Scoop 1 tbsp portions and roll into balls. If too soft, chill briefly again. Roll in matcha powder or your preferred coating.
- Set and serve Refrigerate for 30 minutes to set. Serve chilled or at room temperature for a creamier bite.
Notes
For an extra touch of flavor, try rolling the truffles in a mix of matcha powder and powdered sugar before serving. You can also add a pinch of sea salt on top for a delicious sweet-salty contrast. These truffles make a beautiful gift—just wrap them in mini paper cups and store in a decorative box!
