Ingredients
1 can (15 oz) chickpeas, drained and rinsed
1 large cucumber, diced
1 cup cherry tomatoes, halved
½ cup Kalamata olives, pitted and sliced
¼ cup red onion, finely diced
¼ cup crumbled feta cheese (optional for vegan)
2 tbsp fresh parsley, chopped
Dressing
3 tbsp extra virgin olive oil
1 tbsp red wine vinegar (or lemon juice)
1 tsp Dijon mustard
1 clove garlic, minced
½ tsp dried oregano
Salt & pepper, to taste
Instructions
Prepare the Salad
In a large bowl, combine chickpeas, cucumber, cherry tomatoes, olives, red onion, feta, and parsley.Make the Dressing
In a small bowl or jar, whisk together olive oil, vinegar, Dijon, garlic, oregano, salt, and pepper until emulsified.Toss & Serve
Pour dressing over salad and toss gently to coat evenly.
Let sit for 5–10 minutes for flavors to meld.
Notes
For extra flavor, drizzle with a bit of extra-virgin olive oil and a squeeze of fresh lemon juice before serving. You can also add crumbled feta, fresh herbs like parsley or mint, or a sprinkle of toasted pine nuts for added texture and richness. Serve chilled for the best taste.
