It is baked in an extremely hot oven for a short duration. This causes the exterior of the batter to caramelize and turn a deep, dark brown—almost black—while the center remains jiggly, creamy, and somewhat underbaked.

- 16 oz (450 g) cream cheese, softened
- ¾ cup granulated sugar
- 3 large eggs
- 1 cup heavy cream
- 2 tbsp all-purpose flour
- 1 tsp vanilla extract
- Pinch of salt
Instructions
- Prepare the Oven & Pan:
- Preheat oven to 450°F (230°C).
- Line a muffin tin with parchment paper rounds or use silicone molds.
- Make the Batter:
- In a mixing bowl, beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing well.
- Stir in heavy cream, flour, vanilla, and salt until silky and lump-free.
- Bake:
- Divide batter evenly among muffin cups (about ¾ full).
- Bake for 12–15 minutes, until tops are deeply golden brown and slightly cracked.
- Centers should jiggle slightly when shaken.
- Cool & Set:
- Let cheesecakes cool in the pan for 10 minutes.
- Transfer to a wire rack and chill for at least 2 hours before serving.
