For the Miso-Glazed Cod

  • 4 cod fillets (about 5–6 oz each)

  • 3 tbsp white miso paste

  • 1½ tbsp mirin (Japanese sweet rice wine)

  • 1 tbsp soy sauce

  • 1 tbsp sake (or dry white wine)

  • 1 tbsp honey or maple syrup

  • 1 tsp sesame oil

  • Optional garnish: sliced scallions, sesame seeds

For the Sesame Soba Noodles

  • 8 oz soba noodles

  • 2 tbsp soy sauce

  • 1 tbsp rice vinegar

  • 1 tbsp sesame oil

  • 1 tsp grated ginger

  • 1 tsp honey or brown sugar

  • 1 clove garlic, minced

  • 1 tbsp toasted sesame seeds

  • 1 small carrot, julienned

  • 1 small cucumber, julienned (optional)

  • 1 cup edamame (cooked)

  • 2 scallions, sliced


Instructions

1. Prepare the miso glaze

  1. In a small bowl, whisk together miso paste, mirin, soy sauce, sake, honey, and sesame oil until smooth.

  2. Pat cod fillets dry and brush the glaze generously over the top.

  3. Let the fish marinate for at least 15 minutes (or up to 1 hour in the fridge).

2. Cook the cod

  • Oven method (recommended):
    Preheat oven to 400°F (200°C). Place the cod on a parchment-lined baking sheet and bake for 10–12 minutes, until opaque and flaky. For a caramelized top, broil for 1–2 minutes at the end.

  • Pan-sear method:
    Heat a nonstick skillet over medium-high heat. Sear the cod glaze-side down for 2 minutes, flip carefully, and cook another 3–4 minutes until cooked through.

3. Cook the soba noodles

  1. Bring a pot of water to a boil, cook soba noodles according to package directions (usually 4–5 minutes).

  2. Drain and rinse under cold water to stop cooking and remove excess starch.

4. Make the sesame noodle dressing

Whisk together soy sauce, rice vinegar, sesame oil, ginger, garlic, and honey in a small bowl.

5. Toss noodles

In a large bowl, combine soba noodles, sesame dressing, edamame, carrot, cucumber, scallions, and sesame seeds. Toss until well coated.

6. Serve

  • Place a bed of sesame soba noodles on each plate.

  • Top with a miso-glazed cod fillet.

  • Garnish with extra sesame seeds and scallions.

Notes

For extra flavor, garnish the miso-glazed cod and sesame soba noodles with finely chopped scallions, toasted sesame seeds, and a drizzle of chili oil or ponzu sauce. Pair it with a side of steamed edamame or a crisp cucumber salad for a balanced meal.
