Instructions

1. Heat the Olive Oil

Start by heating the olive oil in a large pot or Dutch oven over medium heat. Olive oil is a healthy fat that will help sauté the vegetables and provide a nice base for the stew.

2. Sauté the Onion and Garlic

Add the chopped onion to the pot and sauté for about 5 minutes, or until the onion softens and becomes translucent. Add the minced garlic and sauté for another 30 seconds until fragrant. This is the base of your stew, where the flavors begin to build.
