Banana Bread Batter

  • 1 ½ cups (190g) all-purpose flour

  • 1 tsp baking soda

  • ½ tsp baking powder

  • ½ tsp salt

  • 1 tsp cinnamon (optional but recommended)

  • ½ cup (113g) unsalted butter, melted & slightly cooled

  • ½ cup (100g) brown sugar

  • ¼ cup (50g) granulated sugar

  • 2 large eggs, room temp

  • 1 ½ tsp vanilla extract

  • 3 medium very ripe bananas, mashed (about 1 heaping cup)

  • Optional mix-ins: ½ cup chocolate chips, chopped nuts, or ¼ cup mini chocolate chips on top


Instructions

1. Prep

  • Preheat oven to 350°F (180°C).

  • Grease or line a 12-cup muffin tin.

2. Mix Dry Ingredients

  • In a bowl, whisk flour, baking soda, baking powder, salt, and cinnamon.

3. Mix Wet Ingredients

  • In another bowl, whisk melted butter, brown sugar, granulated sugar, eggs, vanilla, and mashed bananas.

4. Combine

  • Add dry ingredients to wet and stir just until no flour streaks remain.
    Do not overmix or they’ll be dense!

5. Fill Muffin Tin

  • Divide batter evenly into 12 cups (each about ¾ full).

  • Add chocolate chips, nuts, or streusel on top if desired.

6. Bake

  • Bake 15–18 minutes or until a toothpick comes out clean.

  • Cool in pan 5 minutes, then transfer to rack.

Notes

For extra flavor and texture, sprinkle chopped walnuts, chocolate chips, or a dash of cinnamon on top before baking. Drizzling a little honey or maple syrup over the warm muffins adds a deliciously sweet finish.
