Instructions

Prepare the Mushroom Filling:

  1. Sauté the Onions:
    • In a large skillet, heat 1 tablespoon of butter and 1 tablespoon of olive oil over medium heat. Add the sliced onions and sauté until they are softened and caramelized, about 8-10 minutes. Remove from the skillet and set aside.
  2. Cook the Mushrooms:
    • In the same skillet, add the remaining tablespoon of olive oil and butter. Add the sliced mushrooms and sauté until they are browned and tender, about 5-7 minutes. Season with salt and pepper.
  3. Combine:
    • Return the caramelized onions to the skillet with the mushrooms and stir to combine. Cook for an additional minute to heat through. Remove from heat.

Assemble the Sandwich:

  1. Prepare the Bread:
    • Preheat a skillet or griddle over medium heat. Lightly butter one side of each slice of rye bread.
  2. Layer the Ingredients:
    • Place two slices of rye bread, buttered side down, on the skillet. Top each slice with half of the mushroom and onion mixture, followed by a slice of Swiss cheese. Place the remaining slices of rye bread on top, buttered side up.
  3. Grill the Sandwich:
    • Cook until the bottom is golden brown and the cheese begins to melt, about 3-4 minutes. Carefully flip the sandwiches and cook the other side until golden brown and the cheese is fully melted, about another 3-4 minutes.

Notes
