Ingredients
- Arborio Rice (1 ½ cups): High in starch, creating the signature creamy consistency.
- Chicken or Vegetable Broth (6 cups, warmed): Adds depth and richness to the dish.
- Olive Oil (3 tbsp): Provides healthy fats and enhances the flavor.
- Portobello Mushrooms (1 lb, sliced): Adds earthy, meaty texture and umami richness.
- White Mushrooms (1 lb, sliced): Offers mild, delicate flavor that complements the portobellos.

Notes
To enhance the flavors of your Mushroom Risotto, consider adding truffle oil for a luxurious touch, roasted garlic for deeper umami, or fresh thyme for an aromatic boost. A sprinkle of crispy pancetta or toasted pine nuts can add texture, while a drizzle of balsamic reduction can bring a subtle sweetness. Serve alongside grilled steak or seared scallops for a complete gourmet meal.
