For the Mushroom Filling:

  • 4 large portobello mushrooms (or king oyster mushrooms for a “pulled” texture), sliced

  • 2 tbsp olive oil

  • 1 tbsp chipotle powder or smoked paprika

  • 1 tsp cumin

  • 1 tsp garlic powder

  • Juice of 1 lime

  • Salt and pepper to taste

For Toppings & Assembly:

  • 8 small tortillas (corn or flour)

  • 1 avocado, sliced or mashed into guacamole

  • Pickled red onions (thinly slice 1 onion, add 2 tbsp lime juice, and a pinch of salt)

  • Fresh cilantro

  • Lime wedges

  • Optional: Vegan sour cream, salsa, shredded cabbage


Instructions

Step 1: Marinate Mushrooms

To bring out the best flavors in the mushrooms, start by marinating them. In a large bowl, toss the sliced portobello mushrooms with olive oil, chipotle powder, cumin, garlic powder, lime juice, and a pinch of salt and pepper. Allow the mushrooms to sit and marinate for about 10 minutes. This helps the flavors infuse into the mushrooms, giving them that smoky, savory taste.

Step 2: Cook Mushrooms

You can cook the mushrooms in two ways—either in the oven or on the stovetop.

Oven Method:
Preheat your oven to 400°F (200°C). Spread the marinated mushrooms on a baking sheet in a single layer. Roast for 15–20 minutes until the mushrooms are tender and slightly crispy around the edges.

Stovetop Method:
Heat a skillet over medium-high heat and sauté the marinated mushrooms for 8–10 minutes until they’re tender and caramelized. This method provides a slightly crispier texture.

Step 3: Warm Tortillas

While the mushrooms are cooking, warm the tortillas. You can heat them in a dry skillet for about 30 seconds on each side or wrap them in a damp towel and microwave them for 20 seconds. This makes the tortillas soft and pliable for easy assembly.

Step 4: Assemble Tacos

To assemble, take a warm tortilla and fill it with a generous portion of the cooked mushrooms. Add sliced avocado or mashed avocado (for a creamy guacamole-like topping), followed by pickled red onions and a handful of fresh cilantro. Serve with a lime wedge on the side for that extra zing.

Notes

For added flavor and texture, top your mushroom tacos with avocado slices, crumbled feta or cotija cheese, a drizzle of lime crema, or fresh chopped cilantro. Want some heat? Add pickled jalapeños or a dash of your favorite hot sauce!
