Instructions

1. Preheat & Prep

  • Preheat oven to 350°F (175°C).

  • Lightly grease an 8×8-inch baking dish or oven-safe skillet.


2. Make the Berry Filling

  1. In a medium bowl, combine berries, sweetener, lemon zest, lemon juice, vanilla, and xanthan gum.

  2. Toss gently until evenly coated.

  3. Pour mixture into the prepared baking dish.


3. Make the Almond Flour Crust

  1. In another bowl, whisk together almond flour, sweetener, baking powder, and salt.

  2. Add melted butter, egg, and vanilla.

  3. Stir until a thick, slightly sticky dough forms.


4. Assemble & Bake
