Description

The S’mores Icebox Cake is an indulgent no-bake dessert that combines the classic flavors of s’mores—chocolate, graham crackers, and marshmallow—in a cool, creamy form. This dessert is layered in a dish and then chilled until the graham crackers absorb the moisture, transforming them into a cake-like texture. For the Chocolate Layer:

  • 2 cups (480 ml) cold heavy cream

  • 1 box (3.9 oz / 110 g) instant chocolate pudding mix

  • ½ cup (120 ml) milk

  • 1 tsp vanilla extract

For the Marshmallow Layer:

  • 1 (7 oz / 200 g) jar marshmallow crème (a.k.a. Fluff)

  • 1 cup (240 ml) heavy whipping cream, cold

  • 4 oz (115 g) cream cheese, softened

  • 1 tsp vanilla extract

For Assembly:

  • 1 box (about 9 oz / 250 g) graham crackers

  • 1 ½ cups (90 g) mini marshmallows (for garnish)

  • ½ cup (60 g) chocolate chips or chocolate shavings

  • Optional: crushed graham crackers or a drizzle of chocolate syrup for topping


Instructions

1. Make the Chocolate Filling

  1. In a large bowl, whisk together the pudding mix, milk, and vanilla.

  2. Add heavy cream and beat with a hand mixer until thick and fluffy (about 2–3 minutes).

  3. Set aside or refrigerate while you make the marshmallow layer.


2. Make the Marshmallow Layer

  1. In another bowl, beat softened cream cheese until smooth.

  2. Add marshmallow crème and vanilla; mix until combined.

  3. Slowly pour in the cold cream and beat until fluffy, forming soft peaks.


3. Assemble the Cake

  1. Spread a thin layer of chocolate filling on the bottom of a 9×13-inch dish (to help the crackers stick).

  2. Arrange a single layer of graham crackers on top, breaking pieces as needed to cover the surface.

  3. Spread half of the marshmallow mixture over the crackers.

  4. Add another layer of crackers, then spread half of the chocolate pudding mixture.

  5. Repeat layers: graham crackers → marshmallow cream → graham crackers → chocolate pudding.

  6. Smooth the top with a spatula.


4. Chill

  • Cover and refrigerate for at least 6 hours or overnight.
    (The graham crackers will soften into a cake-like texture.)


5. Garnish & Serve

  • Before serving, top with:

    • Mini marshmallows

    • Chocolate chips or shavings

    • Crushed graham crackers

    • Optional: toast the marshmallows with a kitchen torch for that campfire vibe 🔥
