Ingredients

  • Zucchini – 1 cup (peeled, seeded, and cooked until soft)

  • Egg – 1 large
  • All-Purpose Flour – 2 heaping tablespoons
  • Evaporated Milk – 1 can
  • Milk – ½ cup
  • Butter – ½ tablespoon (melted)
  • Vanilla Extract – 1 teaspoon
  • Salt – A pinch
  • Nutmeg – A sprinkle
  • Unbaked Pie Shell – 8 inches

Instructions

  • Prepare the zucchini – Peel, remove seeds, and cook until soft. Drain well and squeeze out excess water.
  • Blend the filling – In a blender, combine zucchini, sugar, egg, flour, evaporated milk, butter, vanilla, and salt. Blend until smooth.
  • Assemble the pie – Pour the mixture into an unbaked pie shell. Add extra milk or half-and-half if needed to fill the shell.
  • Bake – Preheat the oven to 425°F (220°C) and bake for 20 minutes. Then reduce the temperature to 350°F (175°C) and bake for another 10-15 minutes until the custard is set.
  • Cool & Serve – Allow the pie to cool before slicing. The custard will settle as it cools.
