Ingredients

- Evaporated Milk – 1 can
- Milk – ½ cup
- Butter – ½ tablespoon (melted)
- Vanilla Extract – 1 teaspoon
- Salt – A pinch
- Nutmeg – A sprinkle
- Unbaked Pie Shell – 8 inches
Instructions
- Prepare the zucchini – Peel, remove seeds, and cook until soft. Drain well and squeeze out excess water.
- Blend the filling – In a blender, combine zucchini, sugar, egg, flour, evaporated milk, butter, vanilla, and salt. Blend until smooth.
- Assemble the pie – Pour the mixture into an unbaked pie shell. Add extra milk or half-and-half if needed to fill the shell.
- Bake – Preheat the oven to 425°F (220°C) and bake for 20 minutes. Then reduce the temperature to 350°F (175°C) and bake for another 10-15 minutes until the custard is set.
- Cool & Serve – Allow the pie to cool before slicing. The custard will settle as it cools.
