Ingredients
- 2 cups whole milk
- 1 cup heavy cream
- ¾ cup granulated sugar
- 5 large egg yolks
- ¼ tsp fine sea salt (plus flaky salt for garnish)

- 1 tsp vanilla extract (optional)
Instructions
1. Make the custard base:
- In a saucepan, gently heat milk and cream until just simmering.
- In a bowl, whisk egg yolks with sugar and salt until pale and thick.
- Slowly pour hot milk into yolks while whisking to temper.
- Return mixture to saucepan and cook over low heat, stirring constantly, until thick enough to coat the back of a spoon (about 82–85°C).
2. Strain and chill:
- Strain custard through a fine sieve into a clean bowl.
- Stir in olive oil and vanilla (if using) until fully emulsified.
- Cover and chill in the fridge for at least 4 hours or overnight.
3. Churn:
- Pour chilled base into an ice cream maker and churn until thick and creamy (about 20–25 minutes depending on your machine).
- Transfer to a container and freeze for 2–4 hours to firm up.
4. Serve:
- Scoop and drizzle with a few drops of olive oil.
- Finish with a pinch of flaky sea salt or crushed pistachios for texture.
