- ½ lb (about 225g) penne or your favorite short pasta
- 1 tbsp olive oil
- 1 small yellow onion, diced
- 2 cloves garlic, minced
- 1 can (15 oz) diced tomatoes
- 2 tbsp tomato paste
- 1½ cups vegetable broth or water
- 2 oz cream cheese (or ¼ cup heavy cream)
- ¼ cup grated Parmesan cheese
- 2 cups fresh spinach (or ½ cup thawed frozen spinach, squeezed dry)
- Salt, pepper, and dried basil or oregano to taste
Instructions
- Sauté aromatics: In a large skillet or pot, heat olive oil over medium heat. Add onion and cook until soft, about 3–4 minutes. Stir in garlic and cook for another 30 seconds.
- Add liquids and pasta: Pour in diced tomatoes (with juice), tomato paste, broth, and pasta. Stir to combine and bring to a boil.
- Simmer: Reduce heat to medium-low, cover, and simmer for 10–12 minutes, stirring occasionally, until pasta is tender and most of the liquid is absorbed.
- Make it creamy: Stir in cream cheese and Parmesan until melted and smooth.
- Add spinach: Toss in the spinach and cook for 2–3 minutes until wilted.
- Season and serve: Taste and adjust seasoning with salt, pepper, and herbs. Serve hot with extra Parmesan if you like.
