Instructions

1. Prepare the citrus:

  1. Slice off both ends of each orange.

  2. Using a sharp knife, cut away the peel and pith following the curve of the fruit.

  3. Slice into rounds or cut between the membranes to make segments.


2. Make the dressing:

  1. In a small bowl or jar, whisk together olive oil, vinegar, honey, mustard, orange juice, salt, and pepper until emulsified.

  2. Taste and adjust sweetness or acidity as desired.


3. Assemble the salad:

  1. In a large bowl, toss radicchio (and arugula, if using) with half the dressing.

  2. Arrange on a platter or individual plates.

  3. Scatter orange segments, pomegranate seeds, onion slices, and nuts on top.

  4. Drizzle with the remaining dressing.


4. Garnish & serve:

  • Finish with a pinch of flaky sea salt and a few fresh mint leaves or shaved Parmesan for extra depth.
