Description
At its core, an Oreo Cookie Butter Ice Cream Pie is a hybrid dessert that takes the best elements of a classic sundae and marries them with a traditional tart structure. The base is a thick, buttery crust made from crushed dark cocoa biscuits. On top of that sits a luscious, velvety filling where creamy vanilla ice cream meets the caramelized, gingerbread-like flavor of cookie butter spread.
Ingredients
24 Oreo cookies
5 tbsp melted butter
1 pint vanilla ice cream (softened)
½ cup Cookie Butter (like Biscoff spread)
1 cup whipped topping (or whipped cream)
Extra crushed Oreos (for topping)
Chocolate syrup (optional)
Instructions
1. Make the crust
Crush the Oreos into fine crumbs (use a blender or put them in a zip bag and crush with a rolling pin).
Mix crumbs with melted butter.
Press the mixture firmly into the bottom of a pie pan.
Freeze for 10–15 minutes to set.
2. Prepare the filling
In a bowl, mix the softened vanilla ice cream with cookie butter until smooth.
Fold in the whipped topping.
3. Assemble the pie
Spread the ice cream mixture evenly over the Oreo crust.
Smooth the top with a spatula.
4. Freeze
Freeze the pie for at least 4–6 hours or until firm.
5. Decorate before serving
Sprinkle crushed Oreos on top.
Drizzle chocolate syrup if you like.
