Overnight Oats with Roasted Berries

Overnight Oats with Roasted Berries Recipe

  • Author: David Andersson
  • Total Time: 8 hours 30 minutes (including overnight soak)
  • Diet: Vegan

Description

Overnight oats are a popular, no-cook breakfast that is prepared by soaking rolled oats in liquid overnight. This allows the oats to absorb the liquid, softening them and creating a creamy texture. The best part about overnight oats is their versatility—you can easily add your favorite ingredients to customize the flavor and nutrition to suit your tastes.

Ingredients

Scale

For the Overnight Oats:

  • 1 cup rolled oats
  • 1 cup milk (or plant-based milk like almond, oat, or coconut)
  • 1/2 cup plain yogurt (optional, for extra creaminess)
  • 1 tablespoon chia seeds (optional, for added texture and nutrition)
  • 12 teaspoons honey, maple syrup, or agave (adjust to taste)
  • 1/2 teaspoon vanilla extract (optional)

For the Roasted Berries:

  • 1 cup mixed berries (strawberries, blueberries, raspberries, or blackberries)
  • 1 tablespoon honey or maple syrup
  • 1/2 teaspoon vanilla extract (optional)

Optional Toppings:

  • Nuts or seeds (e.g., almonds, walnuts, chia seeds)
  • Fresh fruit slices
  • Granola
  • Nut butter drizzle

Instructions

Step 1: Roast the Berries

  1. Preheat your oven to 375°F (190°C).
  2. Spread the mixed berries on a baking sheet lined with parchment paper.
  3. Drizzle the berries with honey or maple syrup and add vanilla extract if desired.
  4. Roast in the oven for 15-20 minutes, until the berries are softened and slightly caramelized. Let them cool completely.

Step 2: Prepare the Overnight Oats

  1. In a bowl or jar, combine the rolled oats, milk, yogurt, chia seeds, honey/maple syrup, and vanilla extract. Stir well to combine.
  2. Cover and refrigerate overnight (or at least 6 hours) to allow the oats to soften and absorb the liquid.

Step 3: Assemble and Serve

  1. In the morning, layer the overnight oats in serving bowls or jars.
  2. Top with the roasted berries and any additional toppings you like, such as nuts, seeds, fresh fruit, or granola.
  3. Serve chilled or at room temperature.

Notes

This make-ahead breakfast is both convenient and nourishing. The roasted berries add a rich, jammy flavor that elevates the classic overnight oats. Customize with your favorite nuts, seeds, or a dollop of yogurt for added texture and creaminess.
