Description

The Parmesan-Crusted Chicken Sheet Pan Dinner is a delicious and simple recipe where boneless, skinless chicken breasts are coated in a crispy, Parmesan breadcrumb crust, then baked alongside a variety of roasted vegetables. Everything cooks on one sheet pan, which means fewer dishes and more time to enjoy the meal. The chicken becomes golden and crispy on the outside while staying juicy and tender on the inside, and the vegetables are perfectly roasted with a wonderful balance of flavors.

For the Chicken:

  • 4 boneless, skinless chicken breasts
  • ½ cup grated Parmesan cheese
  • ½ cup breadcrumbs (panko preferred for extra crunch)
  • 2 large eggs, beaten
  • 2 tsp Italian seasoning
  • ½ tsp garlic powder
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 tbsp olive oil

For the Vegetables:

  • 1 lb baby potatoes, halved
  • 1 cup baby carrots
  • 1 cup broccoli florets (or zucchini, bell peppers, cherry tomatoes)
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

  • Preheat Oven Preheat your oven to 425°F (220°C). Line a large baking sheet with parchment paper or lightly grease it.
  • Season the Vegetables In a large bowl, toss the potatoes, carrots, and broccoli with 2 tbsp olive oil, Italian seasoning, salt, and pepper. Spread them on one side of the sheet pan.
  • Prepare the Parmesan Crust In a shallow bowl, mix Parmesan, breadcrumbs, Italian seasoning, garlic powder, salt, and pepper. In another bowl, beat the eggs.
  • Coat the Chicken Dip each chicken breast in the egg, then press into the Parmesan mixture to coat thoroughly. Place the coated chicken on the other side of the sheet pan. Drizzle with olive oil for extra crispiness.
  • Bake Bake for 20–25 minutes, or until the chicken is golden and cooked through (internal temp: 165°F/75°C) and the vegetables are tender.
  • Serve Let rest for a few minutes. Garnish with fresh parsley or more Parmesan if desired.

Notes

Serve with a side of garlic bread or a light green salad for a complete and balanced dinner. You can also swap in your favorite seasonal veggies to keep things fresh and flavorful all year round!
