Ingredients

Scale

For the Brownie Base:

  • ½ cup (1 stick / 115 g) unsalted butter, melted

  • 1 cup (200 g) granulated sugar

  • 2 large eggs

  • 1 tsp vanilla extract

  • â…“ cup (40 g) unsweetened cocoa powder

  • ½ cup (65 g) all-purpose flour

  • ¼ tsp salt

  • ¼ tsp baking powder

For the Coconut Layer:

  • 2 cups (150 g) sweetened shredded coconut

  • 1 can (14 oz / 400 g) sweetened condensed milk

  • ½ tsp vanilla extract

For the Chocolate-Almond Topping:

  • 1½ cups (265 g) semi-sweet chocolate chips

  • 2 tbsp butter or coconut oil

  • â…“ cup (50 g) chopped almonds (toasted for extra crunch)

Instructions

  1. Preheat Oven:
Preheat to 350°F (175°C). Grease or line an 8×8-inch baking pan with parchment paper.

  2. Make the Brownie Layer:
In a medium bowl, whisk together melted butter, sugar, eggs, and vanilla.
Add cocoa powder, flour, salt, and baking powder; stir until just combined.
Pour into the prepared pan and spread evenly.

  3. Bake:
Bake for 20–25 minutes, or until a toothpick inserted near the center comes out with a few moist crumbs.
Let cool slightly (about 10–15 minutes).

  4. Add the Coconut Layer:
In a small bowl, mix shredded coconut, condensed milk, and vanilla until well combined.
Spread evenly over the cooled brownie layer.

  5. Make the Chocolate-Almond Topping:
In a microwave-safe bowl, melt chocolate chips and butter (or coconut oil) in 20-second bursts, stirring until smooth.
Spread melted chocolate over the coconut layer, then sprinkle chopped almonds on top.

  6. Chill:
Refrigerate for at least 1 hour (or until set) before cutting into bars.

  7. Serve:
Slice into squares with a warm knife for clean edges. Store in the fridge for up to 5 days.

Notes

For a festive presentation, decorate the cookies with red, white, and blue icing or sprinkles. Let the icing set completely before stacking or serving to keep the colors vibrant and neat.
