Pickle De Gallo Salad is a fresh, no-cook salad that blends finely chopped dill pickles with crisp vegetables, fresh herbs, and a light dressing made from olive oil, citrus juice, and pickle brine. It mirrors the structure of pico de gallo but swaps tomatoes for pickles, creating a bold and tangy flavor.
Ingredients
1½ cups dill pickles, finely chopped
½ cup cucumber, finely chopped (optional, for freshness)
¼ cup red onion, finely diced
1 small jalapeño, minced (optional)
2 tbsp fresh dill, chopped (or cilantro)
1–2 tbsp pickle juice (to taste)
1 tbsp olive oil
1–2 tsp lemon or lime juice
Fresh black pepper, to taste
Optional add-ins: cherry tomatoes, capers, feta cheese
Instructions
Add chopped pickles, cucumber, red onion, jalapeño, and dill to a bowl.
Drizzle with olive oil, pickle juice, and lemon/lime juice.
Toss gently to combine.
Season with black pepper (salt usually not needed).
Chill 5–10 minutes for best flavor, then serve.
