Description

Pistachio Baklava Rolls are a rolled version of the classic Middle Eastern dessert made with thin layers of filo pastry, filled with crushed pistachios, and drenched in a fragrant syrup. The difference between the traditional layered baklava and these rolls is the shape, making them more convenient to serve and easier to portion. The delicate crispiness of the pastry, combined with the rich pistachio filling and aromatic syrup, creates a dessert that is sure to impress.

For the rolls:

  • 1 package phyllo (filo) pastry (about 400500 g), thawed if frozen

  • 1 ½2 cups (180–240 g) finely chopped pistachios (unsalted, shelled)

  • ½ cup (115 g) unsalted butter, melted (or ghee/clarified butter)

  • 12 tbsp powdered sugar (optional, for mixing with nuts)

  • ½ tsp ground cardamom or cinnamon (optional)

For the syrup:

  • 1 cup (200 g) sugar

  • ¾ cup (180 ml) water

  • 23 tbsp honey (or more for richer syrup)

  • 1 tsp lemon juice

  • 1 tsp orange blossom water or rose water (optional, traditional flavor)


Instructions

1️⃣ Make the syrup (first)

  1. In a saucepan, combine sugar, water, and honey.

  2. Bring to a boil, then reduce heat and simmer 8–10 mins until slightly thickened.

  3. Add lemon juice and optional floral water.

  4. Cool completely — cold syrup + hot baklava = best texture.


2️⃣ Prepare the rolls

  1. Preheat oven to 350°F / 175°C. Grease a baking dish or line with parchment.

  2. Lay out one sheet of phyllo, brush lightly with melted butter.

  3. Stack 2–3 sheets (buttering between each).

  4. Sprinkle a line of chopped pistachios along the long edge (about 2–3 tbsp).

  5. Roll up tightly into a log.

  6. Repeat until all sheets or nuts are used.

  7. Place rolls seam-side down in tray.

  8. Brush tops generously with remaining butter.

  9. Cut each roll into 3–4 pieces before baking (easier now than after).


3️⃣ Bake

  • Bake 30–40 minutes, until deeply golden and crisp.


4️⃣ Syrup soaking

  • Remove hot rolls from oven.

  • Immediately pour cold syrup evenly over the rolls.

  • Let rest at least 2 hours (or overnight) so syrup absorbs fully.

Notes
