  • 1 orange, peeled and diced

  • 1 grapefruit, peeled and diced (or use 2 oranges if you prefer sweeter)

  • 1 lime, juiced

  • ½ small red onion, finely diced

  • 1 jalapeño or red chili, seeded and minced (optional, for heat)

  • ¼ cup fresh cilantro or mint, chopped

  • Salt, to taste


Instructions

  • Prep the oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.

  • Make the pistachio crust:

    • In a small bowl, mix the chopped pistachios, panko (if using), olive oil, salt, and pepper.

    • In another small bowl, whisk the Dijon mustard and honey together.

  • Prepare the salmon:

    • Pat the salmon dry with paper towels.

    • Place the fillets on the baking sheet, skin-side down.

    • Brush the tops with the mustard-honey mixture.

    • Press the pistachio mixture evenly on top of each fillet.

  • Bake:

    • Roast salmon for 12–15 minutes, or until it flakes easily with a fork (internal temp should reach 125–130°F for medium).

  • Make the citrus salsa:

    • While salmon bakes, combine orange, grapefruit, lime juice, red onion, jalapeño, and cilantro in a bowl.

    • Toss gently and season with a pinch of salt.

  • Serve:

    • Plate each salmon fillet with a spoonful of citrus salsa on top or on the side.

    • Garnish with extra herbs or lime wedges if desired.
