Description
Pistachio-Crusted Salmon with Citrus Salsa is a modern and vibrant twist on the classic salmon recipe. The salmon fillets are coated with a crunchy pistachio crust that’s paired with a fresh citrus salsa, which adds a burst of flavor and color. The dish is easy enough for a busy weeknight but elegant enough for special occasions.
Ingredients
For the Salmon:
4 salmon fillets (about 6 oz each), skin-on or skinless
½ cup shelled unsalted pistachios, finely chopped
2 tbsp panko breadcrumbs (optional, for extra crunch)
1 tbsp Dijon mustard
1 tbsp honey or maple syrup
1 tbsp olive oil
Salt and black pepper, to taste
For the Citrus Salsa:
1 orange, peeled and diced
1 grapefruit, peeled and diced (or use 2 oranges if you prefer sweeter)
1 lime, juiced
½ small red onion, finely diced
1 jalapeño or red chili, seeded and minced (optional, for heat)
¼ cup fresh cilantro or mint, chopped
Salt, to taste
Instructions
Prep the oven: Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
Make the pistachio crust:
In a small bowl, mix the chopped pistachios, panko (if using), olive oil, salt, and pepper.
In another small bowl, whisk the Dijon mustard and honey together.
Prepare the salmon:
Pat the salmon dry with paper towels.
Place the fillets on the baking sheet, skin-side down.
Brush the tops with the mustard-honey mixture.
Press the pistachio mixture evenly on top of each fillet.
Bake:
Roast salmon for 12–15 minutes, or until it flakes easily with a fork (internal temp should reach 125–130°F for medium).
Make the citrus salsa:
While salmon bakes, combine orange, grapefruit, lime juice, red onion, jalapeño, and cilantro in a bowl.
Toss gently and season with a pinch of salt.
Serve:
Plate each salmon fillet with a spoonful of citrus salsa on top or on the side.
Garnish with extra herbs or lime wedges if desired.
Notes
Tip: For extra flavor, drizzle the salmon with a touch of honey before adding the pistachio crust, or pair it with a light quinoa or arugula salad for a refreshing, well-rounded meal.
