Ingredients
- 1 cup raw shelled pistachios
- 1 cup rolled oats
- ½ tsp sea salt
- ¼ cup maple syrup (plus extra for drizzling)
- 2 tbsp olive oil
- ⅓ cup unsweetened coconut flakes
- Extra chopped pistachios for topping
Instructions
- Preheat oven to 350°F (175°C). Line an 8-inch square pan with parchment paper.
- Process dry ingredients: In a food processor, pulse pistachios, oats, and salt for 30 seconds until a coarse meal forms.
- Add wet ingredients: With the motor running, drizzle in maple syrup and olive oil until the mixture becomes crumbly and slightly wet.
- Press & top: Press dough evenly into the pan. Sprinkle with coconut flakes and extra pistachios.
- Bake for 10–12 minutes until golden and just set. Don’t overbake—keep them soft!
- Cool & cut: Lift out using parchment edges. Slice into squares. Drizzle with maple syrup if desired.
