Description
A financier is a small, almond-based cake with a light and airy texture, typically baked in a rectangular or oval-shaped mold. Originally created in France, financiers were named after the Parisian financiers who first adopted them as an on-the-go snack during their busy workdays. The original version of this pastry is made with ground almonds, butter, sugar, and egg whites, resulting in a rich yet delicate bite.
Ingredients
- 6.2 oz icing sugar
- 5.3 oz unsalted butter (browned)
- 5.3 oz egg whites (about 5 large)
- 3 oz ground pistachios
- 1.8 oz all-purpose flour
- ½ tbsp rose water
- 1 tsp baking powder
- Pinch of salt
- Optional: fresh raspberries for topping
Instructions
- Prep the Oven & Molds: Preheat oven to 425°F (220°C). Butter and flour financier molds (or use silicone).
- Make Brown Butter: Melt butter until golden and nutty. Cool slightly.
- Mix Dry Ingredients: Whisk icing sugar, flour, ground pistachios, baking powder, and salt.
- Combine Wet & Dry: Add egg whites and rose water to dry mix. Stir in cooled brown butter until smooth.
- Fill & Bake: Fill molds ¾ full. Top with raspberries if using. Bake at 400°F for 3 minutes, then reduce to 350°F and bake 5–7 minutes until golden.
- Cool & Serve: Let cool in molds. Serve with raspberry sauce or dust with powdered sugar and dried rose petals.
