  • For the Pistachio Cream:
    • 1 cup (150 g) shelled pistachios (unsalted)
    • 1 cup (240 ml) heavy cream
    • 1 cup (240 g) mascarpone cheese
    • 1/2 cup (60 g) powdered sugar
    • 1 teaspoon vanilla extract
  • For the Coffee Mixture:
    • 1 cup (240 ml) brewed espresso or strong coffee, cooled
    • 2 tablespoons coffee liqueur (optional)
  • For Assembly:
    • 2430 ladyfingers (savoiardi)
    • Additional crushed pistachios for garnish
    • Cocoa powder for dusting (optional)

Instructions

  1. Prepare the Pistachio Cream:
    • In a food processor, blend the shelled pistachios until finely ground. Be careful not to over-process, or they will turn into a paste.
    • In a mixing bowl, whip the heavy cream until soft peaks form.
    • In another bowl, combine the mascarpone cheese, powdered sugar, and vanilla extract. Mix until smooth.
    • Gently fold the whipped cream into the mascarpone mixture, then fold in the ground pistachios until well combined.
  2. Prepare the Coffee Mixture:
    • In a shallow dish, combine the brewed espresso and coffee liqueur (if using). Let it cool to room temperature.
  3. Assemble the Tiramisu:
    • Quickly dip each ladyfinger into the coffee mixture, ensuring they are soaked but not soggy.
    • Layer half of the soaked ladyfingers in the bottom of a 9×9-inch (23×23 cm) dish or a similar-sized serving dish.
    • Spread half of the pistachio cream over the ladyfingers.
    • Repeat with another layer of soaked ladyfingers followed by the remaining pistachio cream.
  4. Chill:
    • Cover the dish with plastic wrap and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set.
  5. Serve:
    • Before serving, dust the top with cocoa powder (if desired) and sprinkle with crushed pistachios for garnish.

Notes

For an elegant finish, sprinkle crushed pistachios and white chocolate shavings on top before serving. You can also add a splash of pistachio liqueur or rose water to the cream for a unique twist.
