2. Make the dressing:

  1. Whisk together olive oil, vinegar, honey, Dijon mustard, lemon juice, salt, and pepper until emulsified.

  2. Adjust seasoning to taste.


3. Assemble the salad:

  1. In a large bowl, combine arugula, pomegranate seeds, and toasted nuts.

  2. Add sliced red onion and avocado if using.

  3. Drizzle with dressing and toss gently to coat evenly.
