  • Author: David Andersson
  • Total Time: 4 hours (including freezing time)
  • Yield: 6 servings 1x
  • Diet: Gluten Free

Description

Prosecco Sorbet with Gold Flakes is a chilled dessert made with the finest sparkling Prosecco, combined with a simple syrup, lemon juice, and gold flakes to create a decadent, refreshing treat. The sorbet’s light and airy texture, paired with the effervescence of the Prosecco, makes it a perfect dessert for celebrations. The edible gold flakes add a luxurious touch, giving the sorbet an aesthetic beauty that enhances the dining experience.

Ingredients

Scale
  • 2 cups Prosecco (chilled)

  • 1 cup water

  • 3/4 cup sugar (or 1/2 cup honey/agave for a more natural version)

  • 1 tbsp fresh lemon juice

  • Optional: 1 tsp lemon zest for brightness

  • Edible gold leaf or gold flakes (food grade!)

Instructions

  • Make simple syrup:
In a saucepan, heat water + sugar over medium heat just until dissolved. Cool completely.

  • Mix sorbet base:
Stir in Prosecco, lemon juice, and optional zest. Taste and adjust sweetness.

  • Churn:

    • Pour into an ice cream maker and churn according to its instructions (usually 20–25 min).

    • If you don’t have an ice cream maker, see No Churn Method below.

  • Fold in gold flakes:
Once thickened, gently fold in small pieces of edible gold leaf or flakes. Don’t overmix—they’ll disappear!

  • Freeze:
Transfer to a freezer-safe container, cover, and freeze at least 2–3 hours to firm up.

  • Serve:
Scoop into chilled glasses or coupe bowls, sprinkle extra gold flakes on top.

Notes

This elegant Prosecco sorbet is a sparkling showstopper for celebrations or romantic dinners. Serve it in chilled champagne flutes for an extra touch of luxury, and don’t forget the edible gold flakes — they make every scoop shimmer with sophistication!
