Pumpkin Spice Pull-Apart Rolls are a soft, sweet bread made from pumpkin brioche dough that’s flavored with autumn spices, including cinnamon and pumpkin pie spice. The dough is rolled out, spread with a cinnamon-pumpkin spice sugar filling, and stacked into layers. After a second rise and baking, the result is a beautiful, pull-apart loaf that’s as irresistible as it is fragrant. The optional vanilla glaze drizzled on top adds the perfect finishing touch. Ingredients
For the dough:
¾ cup (180ml) warm milk (about 110°F / 43°C)
2 ¼ tsp (1 packet) active dry yeast
3 Tbsp granulated sugar
½ cup (120g) pumpkin purée (not pie filling)
1 large egg
¼ cup (60g) unsalted butter, melted
3 ¼ cups (400g) all-purpose flour
1 tsp salt
1 tsp ground cinnamon
½ tsp pumpkin pie spice
🍂 For the pumpkin-spice sugar filling:
½ cup (100g) brown sugar
2 tsp cinnamon
1 tsp pumpkin pie spice
¼ cup (55g) unsalted butter, melted
🍮 For the glaze (optional but amazing):
½ cup (60g) powdered sugar
1–2 Tbsp milk or cream
½ tsp vanilla extract
Instructions
1. Activate the yeast:
In a large bowl or stand mixer, combine warm milk, yeast, and 1 tsp sugar.
Let stand 5–10 minutes, until foamy.
2. Make the dough:
Add remaining sugar, pumpkin purée, egg, melted butter, salt, cinnamon, and pumpkin spice.
Gradually add flour, mixing until a soft dough forms.
Knead for 6–8 minutes (by hand or mixer) until smooth and elastic.
Place in a greased bowl, cover, and let rise in a warm spot for 1 to 1½ hours, or until doubled in size.
3. Prepare the filling:
In a small bowl, mix brown sugar, cinnamon, and pumpkin spice.
Have the melted butter ready for brushing.
4. Roll out & assemble:
Punch down the dough and roll it into a rectangle about 12×18 inches.
Brush the entire surface with melted butter.
Sprinkle evenly with the spiced sugar mixture.
Cut the rectangle into 5 even strips, stack them on top of each other, then cut the stack into 5 squares.
Arrange the stacks upright in a greased 9×5-inch loaf pan (like a deck of cards).
(You can also layer them in a round pan for a pull-apart ring.)
5. Second rise:
Cover and let rise again for 30–40 minutes, until puffy.
6. Bake:
Preheat oven to 350°F (175°C).
Bake for 30–35 minutes, until deep golden brown and the center feels set.
If it browns too quickly, tent loosely with foil during the last 10 minutes.
7. Glaze:
Whisk together powdered sugar, milk, and vanilla until smooth.
Drizzle over the warm rolls.
Pull apart and enjoy warm — they’re soft, spiced, and slightly caramelized on the edges 😍
