Instructions

1. Prepare the Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  • In a large bowl, whisk together the flour, sugar, baking soda, baking powder, and salt.
  • In another bowl, mix the vegetable oil, buttermilk, eggs, food coloring, vanilla extract, and vinegar until well combined.
  • Gradually add the wet ingredients to the dry ingredients, mixing until just combined. Do not overmix.
  • Divide the batter evenly between the prepared cake pans.

2. Bake the Cake:

  • Bake for 25-30 minutes or until a toothpick inserted into the center comes out clean.
  • Let the cakes cool in the pans for 10 minutes, then transfer to wire racks to cool completely.

3. Make the Cream Cheese Frosting:

  • In a large bowl, beat the softened cream cheese and butter together until smooth and creamy.

  • Stir in the vanilla extract. If the frosting is too thick, add milk one tablespoon at a time until desired consistency is reached.

4. Assemble the Cake:

  • Once the cakes are completely cooled, place one layer on a serving plate. Spread a generous amount of cream cheese frosting on top.
  • Place the second layer on top and frost the top and sides of the cake with the remaining cream cheese frosting.
