Ingredients
For the Crust:
- 1 1/2 cups (150g) graham cracker crumbs (about 12 whole crackers)
- 1/4 cup (50g) granulated sugar
- 6 tbsp (85g) unsalted butter, melted
- Pinch of salt
For the Raspberry Swirl:
- 1 cup (120g) fresh or frozen raspberries
- 2 tbsp granulated sugar
- 1 tsp lemon juice
For the Cheesecake Filling:
- 16 oz (450g) cream cheese, room temperature
- 2/3 cup (135g) granulated sugar
- 2 large eggs, room temperature
- 1 tsp vanilla extract
- 1/4 cup (60ml) sour cream or Greek yogurt
Instructions
1. Prepare the Raspberry Swirl:
- In a small saucepan, combine raspberries, sugar, and lemon juice.
- Cook over medium heat, stirring and mashing berries, until thickened (about 5 minutes).
- Strain through a fine mesh sieve to remove seeds, if desired. Let cool.
2. Make the Crust:
- Preheat oven to 325°F (163°C). Line an 8-inch (20cm) square baking pan with parchment paper, leaving overhang.
- Mix graham cracker crumbs, sugar, melted butter, and salt until combined.
- Press mixture firmly into the bottom of the prepared pan.
- Bake for 8–10 minutes, then let cool slightly.
3. Make the Cheesecake Filling:
- Beat cream cheese and sugar until smooth and creamy.
- Add eggs one at a time, mixing well after each.
- Mix in vanilla and sour cream until just combined.
4. Assemble and Bake:
- Pour cheesecake filling over the cooled crust and smooth the top.
- Drop spoonfuls of raspberry sauce over the cheesecake layer.
- Use a knife or toothpick to gently swirl the raspberry sauce into the cheesecake.
- Bake for 35–40 minutes, or until the center is set but still slightly jiggly.
- Cool to room temperature, then refrigerate for at least 3 hours (overnight is best).
5. Serve:
- Lift bars out of the pan using parchment paper.
- Slice into squares and enjoy!
