Description

Raspberry Zinger Poke Cake is a modern dessert that takes inspiration from the classic poke cake concept. A poke cake is simply a cake that has holes poked into it after baking, allowing various fillings to seep into the cake for added flavor and moisture. In this case, we use a luscious raspberry filling combined with a light whipped topping and toasted coconut, creating a mouthwatering dessert that is both visually appealing and delicious. This cake is ideal for summer gatherings, potlucks, or any time you crave a sweet, fruity treat.

Ingredients

Scale

For the Cake:

  • 1 box (15.25 oz) white cake mix
  • 3 large eggs
  • 1 cup water
  • 1 cup shredded coconut (sweetened or unsweetened)

For the Raspberry Filling:

  • 1 cup raspberry jam or preserves
  • 1/4 cup water

For the Topping:

  • 1 container (8 oz) whipped topping (like Cool Whip)
  • 1/2 cup shredded coconut, toasted
  • Fresh raspberries for garnish (optional)

Instructions

1. Prepare the Cake:

  • Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  • In a large bowl, combine the cake mix, eggs, and water. Mix according to package instructions until smooth.
  • Fold in the shredded coconut.
  • Pour the batter into the prepared baking dish and bake according to package directions (usually 25-30 minutes) or until a toothpick inserted in the center comes out clean.
  • Allow the cake to cool in the pan for about 10 minutes, then poke holes all over the top using a fork or a skewer.

2. Make the Raspberry Filling:

  • In a small saucepan, combine the raspberry jam and water. Heat over medium heat, stirring until the jam is smooth and combined with the water.
  • Pour the raspberry mixture over the cooled cake, ensuring it seeps into the holes.

3. Add the Topping:

  • Let the cake cool completely in the pan.
  • Once cooled, spread the whipped topping evenly over the cake.
  • Sprinkle the toasted coconut on top.

4. Serve:

  • Garnish with fresh raspberries, if desired. Slice and serve chilled or at room temperature.

Notes

For an extra zinger, sprinkle shredded coconut on top or add a layer of raspberry jam between the cake and whipped topping. This cake tastes even better the next day—just chill it overnight for maximum flavor and moisture. Perfect for potlucks, picnics, or a nostalgic sweet treat anytime!
