Ingredients

Scale
  • 3 medium beets, washed and trimmed
  • 4 cups mixed greens (arugula, spinach, or spring mix)
  • ½ cup crumbled goat cheese
  • ¼ cup toasted walnuts or pistachios
  • 1 small shallot, thinly sliced
  • 1 tablespoon honey
  • 1 tablespoon Dijon mustard
  • 2 tablespoons red wine vinegar
  • ¼ cup olive oil
  • Salt and pepper to taste

Instructions

Step 1: Roast the Beets
  1. Preheat the oven to 400°F (200°C).
  2. Wrap each beet individually in foil and place them on a baking sheet.
  3. Roast for 45-60 minutes until tender.
  4. Let the beets cool, then peel and slice into wedges.

Step 2: Prepare the Dressing

  1. In a small bowl, whisk together:
    • Honey
    • Dijon mustard
    • Red wine vinegar
    • Olive oil
    • Salt and pepper
  2. Mix until the dressing emulsifies and becomes smooth.

Step 3: Assemble the Salad

  1. Toss mixed greens with the dressing until evenly coated.
  2. Arrange roasted beet slices on top.

Step 4: Add Toppings

  1. Sprinkle crumbled goat cheese over the salad.
  2. Add toasted walnuts or pistachios.
  3. Top with sliced shallots.

Step 5: Serve and Enjoy!

  • Serve immediately for a fresh, crisp bite.
  • Or chill in the fridge for a refreshing twist!

Notes

For an extra flavor boost, try adding candied walnuts, blood orange segments, or a honey-balsamic drizzle. This salad also pairs beautifully with grilled chicken or crusty bread for a heartier meal.
