Ingredients

Scale
  • 2 medium sweet potatoes (peeled and cubed)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • 1 bunch Tuscan kale (stems removed, chopped)
  • 1/4 cup vinaigrette (lemon juice, olive oil, Dijon mustard, maple syrup)
  • 1/4 cup dried cranberries
  • 1/4 cup crumbled feta cheese
  • 2 tbsp roasted pepitas or pumpkin seeds
  • Optional: 1/2 cup chickpeas or avocado slices

Instructions

  • Roast the Sweet Potatoes
    • Preheat oven to 400°F (200°C).
    • Toss sweet potato cubes with olive oil, salt, and pepper.
    • Spread on a baking sheet and roast for 25–30 minutes, flipping halfway.
  • Massage the Kale
    • In a large bowl, add chopped kale and vinaigrette.
    • Massage with hands for 2–3 minutes until softened and glossy.
  • Assemble the Salad
    • Add roasted sweet potatoes to the kale.
    • Toss in cranberries, feta, and pepitas.
    • Add chickpeas or avocado if using.
  • Serve & Style
    • Plate in shallow bowls or on a platter.
    • Garnish with extra seeds or herbs.
    • Serve warm or chilled.

Notes
