Ingredients
- 2 medium sweet potatoes (peeled and cubed)
- 1 tbsp olive oil
- Salt and pepper to taste
- 1 bunch Tuscan kale (stems removed, chopped)
- 1/4 cup vinaigrette (lemon juice, olive oil, Dijon mustard, maple syrup)
- 1/4 cup dried cranberries
- 1/4 cup crumbled feta cheese
- 2 tbsp roasted pepitas or pumpkin seeds
- Optional: 1/2 cup chickpeas or avocado slices
Instructions
- Roast the Sweet Potatoes
- Preheat oven to 400°F (200°C).
- Toss sweet potato cubes with olive oil, salt, and pepper.
- Spread on a baking sheet and roast for 25–30 minutes, flipping halfway.
- Massage the Kale
- In a large bowl, add chopped kale and vinaigrette.
- Massage with hands for 2–3 minutes until softened and glossy.
- Assemble the Salad
- Add roasted sweet potatoes to the kale.
- Toss in cranberries, feta, and pepitas.
- Add chickpeas or avocado if using.
- Serve & Style
- Plate in shallow bowls or on a platter.
- Garnish with extra seeds or herbs.
- Serve warm or chilled.
