Description

Rosewater Brioche Buns are soft, fluffy buns made from a rich brioche dough, which is gently sweetened and enhanced with the delicate flavor of rosewater. Brioche Dough

  • 3 ½ cups (440 g) all-purpose flour

  • ¼ cup (50 g) sugar

  • 1 ½ tsp salt

  • 2 ¼ tsp (1 packet) instant yeast

  • ½ cup (120 ml) warm milk

  • 4 large eggs (room temperature)

  • ½ cup (115 g) unsalted butter, softened and cubed

Rosewater Syrup (for brushing)

  • ½ cup (100 g) sugar

  • ½ cup (120 ml) water

  • 12 tsp rosewater (to taste)

Optional Garnishes

  • Dried rose petals

  • Chopped pistachios

  • Powdered sugar


Instructions

Make the Brioche Dough

  1. In a stand mixer bowl, combine flour, sugar, salt, and yeast.

  2. Add warm milk and eggs. Mix on low until dough comes together.

  3. Increase speed and knead 5–7 minutes, until smooth and elastic.

  4. Add butter gradually, mixing until fully incorporated. Continue kneading 8–10 minutes until shiny and stretchy (dough will be soft).

  5. Cover and let rise in a warm place for 1–2 hours, or until doubled.

Shape the Buns

  1. Punch down dough and divide into 12 equal pieces. Shape into smooth balls.

  2. Place on a parchment-lined baking tray or into a buttered muffin tin.

  3. Cover loosely and let rise again for 45–60 minutes, until puffy.

Bake

  1. Preheat oven to 350°F (175°C).

  2. Bake buns 18–22 minutes, until golden brown.

Make Rosewater Syrup

  1. In a small saucepan, simmer sugar and water until dissolved (about 3 minutes).

  2. Remove from heat, stir in rosewater.

Finish

  1. While buns are still warm, brush generously with rosewater syrup.

  2. Sprinkle with dried rose petals and pistachios, or dust with powdered sugar.
