Instructions

1. Make the Tart Crust:

  1. In a food processor or large bowl, combine the flour, salt, and sugar.
  2. Add the cold butter cubes and pulse (or cut in with a pastry cutter) until the mixture resembles coarse crumbs.
  3. Gradually add the ice water, 1 tablespoon at a time, until the dough just comes together.
  4. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes.

2. Prepare the Filling:

  1. In a small bowl, mix the goat cheese, ricotta cheese, honey, thyme, salt, and pepper until smooth and creamy. Set aside.

3. Assemble the Tart:

  1. Preheat your oven to 375°F (190°C).
  2. On a lightly floured surface, roll out the chilled dough into a rough circle, about 12 inches in diameter. Transfer it to a parchment-lined baking sheet.
