Dry Ingredients

  • 1 ¼ cups (150 g) rye flour

  • 2 cups (250 g) bread flour (or all-purpose flour)

  • 2 tbsp brown sugar or honey

  • 2 ¼ tsp (1 packet) active dry yeast

  • 1 ½ tsp salt

  • 1 tbsp caraway seeds (to taste)

Wet Ingredients

  • 1 cup (240 ml) warm water (about 110°F / 45°C)

  • 2 tbsp unsalted butter, melted (plus extra for brushing)

  • 1 tbsp molasses (optional, for deeper color and flavor)


Instructions

1. Activate the Yeast

  1. In a small bowl or measuring cup, combine warm water, brown sugar (or honey), and yeast.

  2. Let stand for 5–10 minutes, until foamy.


2. Make the Dough

  1. In a large bowl, whisk together rye flour, bread flour, salt, and caraway seeds.

  2. Add yeast mixture, melted butter, and molasses (if using).

  3. Stir until a shaggy dough forms, then knead on a lightly floured surface (or in a mixer with a dough hook) for 8–10 minutes, until smooth and elastic.

    • Note: Rye doughs are stickier than wheat doughs—avoid adding too much extra flour; a slightly tacky dough is ideal.


3. First Rise

  • Place dough in a greased bowl, cover, and let rise in a warm spot for 1 hour, or until doubled in size.


4. Shape the Rolls

  1. Punch down dough and divide into 12 equal pieces (about golf-ball sized).

  2. Shape into smooth balls and arrange on a parchment-lined baking sheet or in a greased 9×13-inch pan.

  3. Cover and let rise again for 30–45 minutes, until puffy.


5. Bake

  1. Preheat oven to 375°F (190°C).

  2. Brush rolls with melted butter or a light egg wash (1 egg + 1 tbsp water) for shine.

  3. Bake 20–25 minutes, until golden brown and hollow-sounding when tapped on the bottom.


6. Finish & Serve

  • Brush again with melted butter while warm for a soft crust.

  • Sprinkle with a few extra caraway seeds if desired.
