Description
Rye & Caraway Seed Dinner Rolls are a soft, tender bread with a rich flavor profile, thanks to the combination of rye flour and caraway seeds. These rolls are perfect for serving alongside hearty dishes like stews and roasts or simply enjoyed warm with a bit of butter. The rye flour gives the rolls a slightly denser texture compared to regular white bread, while the caraway seeds provide a slightly spicy, aromatic flavor that elevates the rolls. This recipe balances the earthy rye flavor with the sweetness of brown sugar or honey, making it an irresistible treat.
Ingredients
Dry Ingredients
1 ¼ cups (150 g) rye flour
2 cups (250 g) bread flour (or all-purpose flour)
2 tbsp brown sugar or honey
2 ¼ tsp (1 packet) active dry yeast
1 ½ tsp salt
1–1½ tbsp caraway seeds (to taste)
Wet Ingredients
1 cup (240 ml) warm water (about 110°F / 45°C)
2 tbsp unsalted butter, melted (plus extra for brushing)
1 tbsp molasses (optional, for deeper color and flavor)
Instructions
1. Activate the Yeast
In a small bowl or measuring cup, combine warm water, brown sugar (or honey), and yeast.
Let stand for 5–10 minutes, until foamy.
2. Make the Dough
In a large bowl, whisk together rye flour, bread flour, salt, and caraway seeds.
Add yeast mixture, melted butter, and molasses (if using).
Stir until a shaggy dough forms, then knead on a lightly floured surface (or in a mixer with a dough hook) for 8–10 minutes, until smooth and elastic.
Note: Rye doughs are stickier than wheat doughs—avoid adding too much extra flour; a slightly tacky dough is ideal.
3. First Rise
Place dough in a greased bowl, cover, and let rise in a warm spot for 1 hour, or until doubled in size.
4. Shape the Rolls
Punch down dough and divide into 12 equal pieces (about golf-ball sized).
Shape into smooth balls and arrange on a parchment-lined baking sheet or in a greased 9×13-inch pan.
Cover and let rise again for 30–45 minutes, until puffy.
5. Bake
Preheat oven to 375°F (190°C).
Brush rolls with melted butter or a light egg wash (1 egg + 1 tbsp water) for shine.
Bake 20–25 minutes, until golden brown and hollow-sounding when tapped on the bottom.
6. Finish & Serve
Brush again with melted butter while warm for a soft crust.
Sprinkle with a few extra caraway seeds if desired.
Notes
These hearty dinner rolls have a subtle nutty flavor from rye and a fragrant hint of caraway seeds. Perfect alongside soups, stews, or a cozy family meal, they’re best served warm with butter.
