Description

Rye Flour Crackers with Seeds are a savory snack made using rye flour, all-purpose flour, and a variety of seeds like sesame, sunflower, and pumpkin. These crackers are both hearty and crunchy, making them the ideal snack for those who love whole grains. The addition of seeds not only enhances their flavor but also adds an extra nutritional boost, giving them a satisfying crunch.

Ingredients

Scale
  • 1 cup (120 g) rye flour

  • 1 cup (120 g) all-purpose or whole wheat flour (can use 100% rye but texture will be denser)

  • 1 tsp salt

  • 1 tsp sugar or honey (optional, for slight flavor balance)

  • 2 tbsp olive oil (or melted butter)

  • ½ cup (120 ml) water (add more if needed)

  • 23 tbsp mixed seeds (e.g., sesame, sunflower, pumpkin, flax, chia)

  • Optional toppings: extra seeds, sea salt flakes

Instructions

  1. Preheat oven:
Set to 375°F / 190°C. Line a baking sheet with parchment paper.

  2. Mix dry ingredients:
In a bowl, combine rye flour, all-purpose flour, salt, and seeds.

  3. Add liquid ingredients:
Add olive oil and water. Mix until a firm dough forms. If dough is too dry, add 1–2 tsp more water.

  4. Knead & roll out:
Lightly flour your work surface. Roll dough very thin (about 1–2 mm). The thinner, the crispier.

  5. Cut into shapes:
Use a knife, pizza cutter, or cookie cutter to make squares, rectangles, or any shape.

  6. Optional topping:
Lightly brush with water or oil, sprinkle extra seeds or sea salt, and press gently to stick.

  7. Bake:
Bake for 12–18 minutes, depending on thickness, until golden and crisp. Watch closely—thin crackers cook fast!

  8. Cool completely:
They crisp up more as they cool.

Notes

These rye flour crackers pair wonderfully with hummus, cheese, or smoked salmon. You can experiment with different seed mixes like flax, chia, or sunflower seeds for added texture and nutrition. Store them in an airtight container to keep them crisp for up to a week.
