Description

The Salted Maple Pecan Upside-Down Cake is a decadent dessert that features a sticky, sweet topping of caramelized pecans and maple syrup. The cake itself is fluffy and moist, with a slight tang from buttermilk and a subtle hint of vanilla. The unique upside-down method allows the pecans to soak into the batter as the cake bakes, making every bite rich with flavor. When flipped over, the topping forms a beautiful, golden caramel layer, making it both visually appealing and mouthwatering. This cake is perfect for fall, but it’s versatile enough to enjoy all year long.

Ingredients

Scale

For the Pecan Topping:

  • ½ cup unsalted butter
  • ¾ cup brown sugar
  • ¼ cup pure maple syrup
  • ½ tsp cinnamon
  • ¼ tsp sea salt (or flaky salt for finishing)
  • 1½ cups pecan halves

For the Cake Batter:

  • 1½ cups all-purpose flour
  • 1½ tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup unsalted butter, softened
  • ¾ cup granulated sugar
  • 2 large eggs
  • 1 tsp vanilla extract
  • ½ cup buttermilk (or ¼ cup yogurt + ¼ cup milk)

Instructions

  1. Prepare the Topping: Melt butter in a saucepan. Stir in brown sugar, maple syrup, cinnamon, and salt. Simmer for 1–2 minutes until glossy. Pour into a greased 9-inch round cake pan. Arrange pecans evenly over the syrup.
  2. Make the Cake Batter: In a bowl, whisk flour, baking powder, baking soda, and salt. In another bowl, cream butter and sugar until fluffy. Add eggs one at a time, then vanilla. Alternate adding dry ingredients and buttermilk, mixing gently until smooth.
  3. Assemble & Bake: Spoon batter over pecan topping and smooth the surface. Bake at 350°F (175°C) for 35–40 minutes, or until a toothpick comes out clean.
  4. Invert & Serve: Cool for 10 minutes. Run a knife around the edge, place a plate over the pan, and flip. Let the topping settle before lifting the pan. Sprinkle flaky salt if desired.

Notes

This Salted Maple Pecan Upside-Down Cake is best enjoyed slightly warm, letting the caramelized maple topping shine. Pair it with a scoop of vanilla ice cream or a dollop of whipped cream for an indulgent dessert, or enjoy it with coffee or tea for a cozy treat.
