Wet Ingredients:

  • 2 large eggs
  • 1 cup (240ml) milk or buttermilk (for tang) 1

  • ¼ cup (60g) Greek yogurt (optional, for moisture)

Mix-Ins:

  • 1½ cups (75g) fresh spinach, finely chopped (or thawed frozen spinach, drained)
  • ¾ cup (100g) crumbled feta cheese
  • ¼ cup sun-dried tomatoes or olives, chopped (optional)


Instructions

Prep:

Preheat oven to 375°F (190°C). Grease a 12-cup muffin tin or line with liners

Mix Dry Ingredients:

In a large bowl, whisk flour, baking powder, baking soda, garlic powder, paprika, salt, pepper, and oregano

Combine Wet Ingredients:

In another bowl, beat eggs, then whisk in milk, olive oil, and Greek yogurt until smooth.
Assemble Batter:

Pour wet ingredients into dry mix. Fold gently until just combined—do not overmix.

Cool & Serve:
