Ingredients
- 4 salmon fillets (4–6 oz each)
- 1 lb asparagus, trimmed
- ¼ cup olive oil
- 1 lemon, juiced and zested
- 3 cloves garlic, minced
- 1 tbsp dried thyme
- 1 tbsp dried parsley
- Salt and black pepper, to taste
- Lemon slices, for garnish
- Fresh herbs, optional for serving
Instructions
- Preheat & Prep Preheat oven to 400°F (200°C). Line a sheet pan with parchment paper. Arrange salmon fillets in the center and asparagus around them.
- Make Marinade In a small bowl, whisk together olive oil, lemon juice and zest, garlic, thyme, parsley, salt, and pepper.
- Coat & Bake Brush marinade generously over salmon and asparagus. Top salmon with lemon slices. Bake for 12–13 minutes, or until salmon is cooked through and asparagus is tender.
- Serve & Garnish Sprinkle with fresh herbs and serve immediately. Spoon any pan juices over the top for extra flavor.
Notes
For a complete meal, serve with quinoa, brown rice, or roasted baby potatoes. A dollop of garlic yogurt sauce or a sprinkle of feta cheese can add a creamy, tangy twist.
